Exposure and implantation: “Assurdino” is the result of a young and bizarre blend of grapes from the vines surrounding the hill of Poggioventoso. Grapes: the blend changes and is mostly made of the Sangiovese and Merlot grape varieties. Pruning and maturation: between 20% and 30% of the vineyards destined to the production of “Assurdino” undergoes a delicate summer pruning during the veraison period.

Vinification techniques: the grapes, picked in September, undergo a soft destemming and pressing followed by the alcoholic fermentation in stainless steel tanks at controlled temperature, at 25-28°C. In this way we are able to extract the noble components of the peels with the use of periodical punching and some delestages. Maceration on the skins continues even after the end of the alcoholic fermentation for 8-10 more days, so as to have a total maceration period of 14-15 days.  Refining: After a few-months-long refining in steel tanks, “Assurdino” undergoes a short stabilization phase so that its fresh character can be fully enjoyed.

Longevity:  Fresh, pleasant “Assurdino” can be immediately enjoyed, even in the summer. Easy to drink and cheerful, it is suitable for every day.

Sensorial characteristics: ruby red; cherries and marasca cherries stand out among the notes of red fruits. Soft, ripe tannins, with a body suitable for its easy drinkability.

Food pairing: “Assurdino” can be perfectly matched with tasty first courses from the Mediterranean tradition. It can also be paired very successfully with meat starters, cheese and typical Tuscan cured meat.
