Exposure and implantation: the grapes with which Rosato is made come from our Merlot vineyard, with South-East exposure. Grapes: 100% Merlot. Pruning and maturation: between 15% and 30% of the vineyards destined to the production of Rosato undergoes a delicate summer pruning during the veraison period.

Vinification techniques: the whole bunches of Merlot grapes for the production of Rosato are picked in late August and moved to a closed inert (thanks to nitrogen) press, protecting the atmosphere with which the grapes are in contact from undesired oxidations. At the end of the soft pressing, the free-run must undergoes a short static cold decantation and completes the alcoholic fermentation in steel tanks, at 14-16°C.  After the alcoholic fermentation, for 5-6 months the wine undergoes periodical and regular “batonnages”, which contribute to its correct refining and aromatic evolution. Bottling takes place in the spring following the harvest.

Refining: The refining of Rosato takes place in steel tanks with no malolactic fermentation in order to preserve the freshness of the grapes and their aromatic integrity.  The wine undergoes a short stabilisation phase in steel tanks before being bottled and continuing its life in the bottle.

Longevity: Rosato begins to express its best potential between the spring and summer after the bottling, when one can notice the highest expression of its aromas and its pleasant taste. Sensorial characteristics: light pink colour; intense aromas, fruits of the forest, cherries. Excellent freshness on the palate, a good acid note, medium body paired with a fruity and inviting finish.

Food pairing: crustaceans in all sorts of recipes and rich and tasty sea fish, even served with tomato sauce, can all be perfectly paired with this wine from the Mediterranean sea, to be served in large tulip glasses at 10-12°C.
